Hi guys. I'm blogging with a bad cold this week. So breakfasts in my house have to be simple right now. I've completely run out of energy. Yet, don't waffles sound so good? Here's an easy method I found for mixing up the batter in a blender (you could even do it the night before)...
Here's a method for making these tasty-looking cornmeal waffles in the blender that I found over at Living Tastefully. Best idea yet: Make the batter the night before and just scoop it into a waffle maker the next morning for a no-hassle, special breakfast (top with tons of fresh berries, of course!):
Blender Cornmeal Waffles

Ingredients:
1 egg
3/4 cup milk
1/4 cup canola oil
1 cup unbleached flour
2 tablespoons cornmeal
2 teaspoons baking powder
2 teaspoons sugar
1/4 teaspoon salt
Berries for topping
Preparation:
Preheat the waffle iron. Put all of the ingredients into the blender; cover and blend until dry ingredients are moistened. You may need to clean down the sides of the blender with a rubber spatula once or twice. Do not over-process. When ready to make, pour batter onto waffle iron grid and bake until golden, about 3 minutes.
